Single-variety extra virgin olive oil made exclusively from Nocellara del Belice olives grown on our farm in Castelvetrano, western Sicily.
The olives are picked at optimal ripeness and cold-extracted: crushing, malaxation and centrifugation all stay below 27 °C, so the oil keeps the fruit's aroma, colour and antioxidants.
Grassy on the nose, fruity on the palate with a pleasantly peppery finish. Best used raw on vegetables, pulses, bruschetta and fish.
